Tomislav

I had the most divine dinner tonight at Tomislav in Darlinghurst (just opposite the Coca Cola sign).
I'd read some good reviews for this new restaurant. The head chef Tomislav Martinovic has worked in the kitchens under Matt Moran, Guillaume Brahimi and even had a stint working for the king of molecular gastronomy, Heston Blumenthal at The Fat Duck in England.
We started with the sea salt and vinegar rice crackers which arrive to the table flavour free until you spray them with the atomiser that accompanies them. The flavour, kick starts the taste buds and is a great novelty.
I have the egg linguine with goat's cheese, broccoli and anchovy for mains. It is delicious and beautifully presented.
I finish with the apple crumble with clotted cream icecream.
It is a deconstructed apple crumble, pieces of caramelised apple are covered with a layer of crumble mixture that has been laced with popping candy. The candy fizzes on the tongue as you eat the apple crumble. It creates the most incredible texture. A must-try when you come to Tomislav.
The restaurant has a comprehensive wine list and plenty of great wines by the glass on offer, including dessert wines.
I can't wait to return to Tomislav, what a fabulous addition to Sydney dining!
